Orange Olive Oil Cake- Ridiculously Easy and Super Moist

Orange Olive Oil Cake is one of my favourite desserts. I mean who doesn’t like citrus flavours with a bit of sweetness. It is loaded with bright citrus flavour from orange and super moist texture from olive oil. This cake is so easy to make. It can be served with a sprinkle of powdered sugar or with a simple orange glaze or just as it is. It pairs beautifully with a coffee or espresso, doesn’t require any complicated technique or tools to make it and of course taste absolutely fantastic.

Olive Oil cakes gained an overnight popularity some years back when Kylie Jenner shared it on Instagram. Since then, the whole olive oil cake thing took on a whole life of its own and EVERYONE started baking olive oil cakes. There are tons of recipes on the internet but most of them use a lot of olive oil which makes the flavour too strong and the texture of the cake a bit too greasy. I prefer this recipe as there is a good balance of fat from olive oil and freshness from oranges. 

Does Olive Oil Cake taste like Olive Oil?

Olive oil cakes do not taste like olive oil. Infact it is there just to add richness and moisture to the cake. It gives cakes a wonderfully moist texture and a light, subtle flavour that pairs perfectly with other ingredients like fresh fruit and nuts. It is also a much healthy alternative to store-bought butter as it is rich in antioxidants and packed with good fats. It is great for people avoiding dairy or people who are lactose intolerant. You’ll want to use good quality extra virgin olive for this recipe or else you might just end up with an oily cake.

Ingredients Needed

For this Orange Olive Oil cake, you will need the following ingredients (exact quantities are provided in the recipe with step-by step instructions are below):

Olive oil: Of course! I used cold pressed extra virgin olive oil for this recipe. 

Fresh Unsweetened Orange Juice and Orange Zest: Fresh juice is always better than canned ones. It tastes better and is definitely a much healthier option than store-bought ones. You can use any orange.

Flour: I used a mix of wholewheat flour and all purpose flour. You can bake it with just all purpose flour alone or with just whole wheat flour. I have tried this cake with just wholewheat flour. The taste is excellent but it is slightly denser than the one with all purpose flour. So, I chose a mid way and went with half and half. 

Vanilla extract: Go for pure vanilla extract and not the essence. It tastes much better while the latter gives a very synthetic like flavour. 

Baking Soda and Baking Powder: These are leavening agents and must be used. Do not use baking soda or powder that is older than 1 year. 

Castor Sugar: You can also bake this cake with unprocessed sugar like palm sugar or coconut sugar. But do remember that this will alter the taste a bit because palm sugar does have an earthy and a rustic taste. I prefer white castor sugar for this recipe. 

Salt: Salt balances and accentuates the sweetness of the cake

Eggs: Eggs bring in that much needed texture, lightness and fluffiness. However, if you do not want to use eggs then substitute 1 egg with flaxmeal. 1 tsp ground roasted flaxseeds in 4 tbsps water. Let it sit for 10 minutes. Use this mixture in place of egg or use 1/4th cup of Greek yogurt for 1 egg. So, if the recipe calls for 2 eggs, then you will need half a cup or Greek yogurt. 

Cornstarch: This helps reduce the protein content in the flour, making the cake more tender. In some countries it is called cornflour.

Now, let’s see the full recipe 

Recipe

Ingredients: cup measurements 250 grams

Wet Ingredients 

  1. Olive Oil: 1/4th cup
  2. Orange Juice: 125 ml
  3. Sugar: 1/3rd cup (I do not like too sweet cakes. You can use 1/2 cup sugar if prefer sweeter 
  4. Eggs 2 large
  5. Vanilla Extract: 1/2 tsp
  6. Orange Zest: 1 tbsp

Dry Ingredients

  1. Wholewheat flour: 1/2 cup
  2. All Purpose Flour: 1/2 cup
  3. Salt: 1/4th tsp
  4. Baking Soda: 1/2 tsp
  5. Baking Powder: 1/2 tsp
  6. Cornstarch: 1 tbsp

Instructions 

  • Pre-heat oven to 180 C and line a 6” round pan with a parchment paper.
  • In a large bowl add olive oil and castor sugar. Whisk till well combined. Then add eggs one by one and whisk till it becomes foamy. 
  • Now add vanilla extract and whisk again for a minute. 
  • Sift in all the dry ingredients in a pan. Add orange zest and mix until well combined. 
  • Now add dry ingredients to wet ingredients in batches. Keep alternating between dry ingredients and orange juice. Add one batch of dry ingredients followed by little orange juice and then gently fold till combined. Keep repeating till all the dry ingredients are used up and the batter is well combined. Do not over mix the batter. 
  • Pour the batter into a prepared pan. Tap on the counter 2 or 3 times to clear air pockets. 
  • Bake in the preheated oven for 40 minutes or till toothpick inserted at the centre comes out clean with moist crumbs attached. 
  • Allow it to cool in the pan for 10 minutes then demould by running a knife along the edges. The cake will come out smoothly. 
  • Allow it to cool completely on wire rack before dusting it with powdered sugar or glazing it. 
  • Note: This cake stays fresh at room temperature for 2 days. Wrap it with butter paper and store it in a container with a lid.

Protein Rich Cherry Pancakes Recipe

Summer is here and cherries are in season. You have got to try this recipe before the cherry season runs out. These healthy fats pancakes are fluffy, delicious and a little addictive. Made with whole grains, milk and egg these come together in just 10 minutes. 

I normally make pancakes with different fruits like banana, apple, strawberries but never tried it with cherries. It was only when I had 2 boxes of cherries that I decided to give it a shot. I think this is the first time I have ever made anything with cherries. I just don’t eat it with anything else. Cherries are pretty perfect on their own. Also, cherries are super healthy too. They are loaded with antioxidants which have anti-inflammatory properties. If you have been exercising and have sore muscles have cherries daily. They are excellent to soothe sore muscles. 

With all the goodness of cherries, these pancakes are packed with protein too. Just 4 pancakes have approx. 25 grams of protein. So, it’s a win-win situation wherein cherries are helping to heal your sore muscles and you are getting quality protein from these pancakes.

  • 1/2 cup Buttermilk: 6 gms Protein
  • 1 egg: 6 gms Protein: 3/4th Wholewheat flour: 10-12 gms Protein
  • 1/2 cup rolled Oats: 5-6 gms Protein

I served this to my little one yesterday and guess what, he gave me 83,000 crore likes for these pancakes. That’s how he described it when I asked him how was the taste 😁

Main Ingredients you need and their Substitutes

Wholewheat Flour: I have made these pancakes using wholewheat flour. You can make this gluten free by using gluten free flour like millet flour. Buckwheat, barnyard millet, pearl millet or finger millet flour, they all go well.

Rolled Oats: I have also added rolled oats in combination to wholewheat flour. It gives a nice bite and texture to the pancakes. You can skip it if you like and just use wholewheat flour.

Jaggery Powder: Some form of sweetness helps to enhance the taste. Jaggery has its own distinct flavour and I think goes very well with earthy and nutty flavour of wholewheat flour. You can use any unprocessed sugar like palm sugar or coconut sugar.

Buttermilk: Buttermilk is an excellent ingredient in baked goods and pancakes because it helps create light and fluffy foods by encouraging carbon dioxide bubbles to form in the batter. Also, it gives a slightly tangy flavour which I love. If you don’t have buttermilk, you can use yogurt or milk. You can also make these vegan by using  Almond milk or Coconut milk. 

Eggs: Eggs are helpful in adding volume to the pancakes. They also provide moisture along with the oil. However, if you want to make these eggless, just take 1 tbsp of chia seeds or flaxseeds (coarsely ground), mix 4 tbsps of water. Keep aside for 15 minutes. The mixture will get a gel like texture. Use this in place of 1 egg. 

Coconut Oil: Coconut oil not only adds flavor but also nutrition. Pure coconut oil is anti-inflammatory and antioxidant in nature, that helps maintain heart health. Thanks to the good fats. You can substitute coconut oil with either butter or olive oil.

Now on to the process of making these cherry pancakes

Recipe: makes 4-5 pancakes

Ingredients:-

  1. Deseeded Cherries: 10-12
  2. Buttermilk: 1 cup
  3. Egg: 1 large
  4. Wholewheat Flour: 3/4th cup
  5. Rolled Oats: 1/2 cup
  6. Pure Vanilla extract: 1/2 tsp
  7. Jaggery Powder: 2 tsps
  8. Baking Soda: 1/2 tsp
  9. Salt: a generous pinch
  10. Coconut Oil: 1 tbsp
  11. Oil/Butter for cooking 

Instructions 

  • In a blender, add 8-9 deseeded cherries, buttermilk, egg, pure vanilla extract, coconut oil & jaggery powder. Blend till everything comes together. 
  • In a bowl, sieve wholewheat flour, baking soda and salt. Mix well. Now add rolled oats and mix again. 
  • Gradually add the wet ingredients to dry ingredients and make a thick flowing consistency batter. Gently mix till everything incorporates well but do not over mix the batter 
  • Now grease a non-stick pan with some butter or oil. When the pan is medium hot, add 1/3rd cup of batter or according to the size you prefer. Once the bubbles form and top sets, flip and cook both the sides till golden brown. 
  • Enjoy it as it is or serve with maple syrup or honey or toppings of your choice.

Apple Pancakes for Baby-led Weaning or Toddlers-Dairy free Gluten free 

Apple pancakes are great finger foods for baby lead weaning or toddlers. Pancakes are the simple snack or breakfast option that I often whip for son. I experiment quite a lot with different wholegrain flours and fruits to make nutritious pancakes for my child. 

The good part about these apple pancakes which makes it great for babies and toddlers is that, it doesn’t contain any leavening agents. 

These pancakes are very simple to make. You can literally whip these in 15 minutes with minimal ingredients. All you need is rolled oats, apple and an egg. These pancakes do not require any milk. Moisture from apple and egg will be enough to get the right batter consistency.

If you don’t have rolled oats, you can use wholewheat flour too or any other flour of your choice. I can bet your toddler won’t refuse this for breakfast 

Recipe: makes 4 pancakes

Ingredients 

  1. Large Apple: 1 
  2. Large Egg: 1
  3. Rolled Oats flour: 5 tbsps (simply grind rolled oats in a grinder)
  4. Rolled Oats: 2 tbsps 
  5. Butter/Oil for cooking
  6. Cinnamon: 1/4th tsp
  7. Vanilla extract: 1/4th tsp

Instructions

  • Peel the apple and grate it in a bowl. 
  • Crack an egg straight in a bowl or you can use a separate bowl and lightly whisk it first and then add to apple. Mix it well.
  • Tip in cinnamon and pure vanilla extract. Mix well. 
  • Now add rolled oats flour and 2 tbsps rolled oats. This is optional. I like to keep a bite and texture of rolled oats in pancakes. You can grind it if you want. Mix till everything incorporates. Batter consistency is thick.
  • Heat a nonstick or cast iron pan to a medium heat. Brush it with some butter or oil. Pour 1 scoop or roughly 1/4th cup batter.
  • Cook till top sets and edges start to leave the pan. Gently flip and cook the other side till golden brown. Cook the remaining batter similarly.

How to serve pancakes?

  • Babies 6-9 months old: cut pancakes vertically in the size of your index finger. It is easier for babies to grasp.
  • Babies 9months+: You can cut the pancake to small bite size pieces.
  • Toddlers: Serve the same way as you would serve an adult. You can also smear pancakes with some nut butter fold them and make a little pancake sandwich.

Variations

  1. You can swap apple with any other fruit of your choice like peach, strawberry or mango.
  2. You can also experiment with different flours- wholewheat flour or different millet flour.
  3. You can also substitute fruit with a vegetable like carrot or zucchini.

Barnyard Millet and Foxnuts Savoury Pancakes- Protein Rich Gluten Free

I try to have atleast 2 gluten free meals in a day. I don’t have any gluten allergy but I think it keeps my system in check. There are exceptional days when all my meals have gluten but mostly I prefer breakfast and dinner to be gluten free. 

Millet, an ancient grain has gained quite a well deserved popularity in recent times. Traditional millets have found their way back into households quickly winning hearts. It’s naturally gluten free and offers tremendous health benefits. There are countless reasons why you should have 1 meal in a day that contains millets. 

There are several types of millets you can choose from like foxtail millets, sorghum millet, pearl millet or finger millet. But today we will use Barnyard Millet. In addition to millets, these pancakes also include foxtnuts (makhana), flattened rice (poha) and buttermilk which is a great source of protein.

Benefits of Barnyard Millets 

  • Barnyard millet or Sanwa rice as it is popularly known has high levels of protein, calcium, iron, minerals, and vitamin B complex.
  • It is also low in carbohydrates making it a boon for those with type II diabetes and cardiovascular diseases.
  • It contains high amounts of iron- richest amongst all millets and cereal grains.
  • It is low in calories and a good source of highly digestible protein

Benefits of Foxnuts/Makhanas 

Makhanas were previously so under-appreciated. They have become more popular in recent years as people have become more health conscious. 

  • Foxnuts are a fabulous source of protein, magnesium and potassium. Just 100 grams of foxnuts can give your 9 grams of quality, easy to digest natural protein.
  • They have high calcium content.
  • Studies have shown that foxnuts aid in management of blood sugar levels.
  • Fox nuts are high in astringent properties and can help prevent kidney problems.

I tried these pancakes for the first time today and surprisingly they came out so nice and flavourful. Even my 10 year old son loved it and ate 4 of these for breakfast. They are crisp on the outside and soft on the inside. I paired it with my Tangy Spicy Peanut Chutney for more flavour and to add more protein in my diet.

  1. Barnyard millet: It tastes like broken rice and is also a fabulous substitute for rice. They are also ideal for summers as this millet has cooling properties. In case you can’t find barnyard millet flour, you can substitute it with other millets like pearl millet or sorghum flour.
  2. Flattened Rice/Poha: It is a delightful and nutritious breakfast option with numerous health benefits. It is also an exceptional vegetarian source of Iron. If you can’t find poha, you can use rice flour. 
  3. Foxtail Nuts/Makhana: Makhanas add a great nuttiness and chewy texture to these pancakes. 
  4. Buttermilk: It is a great source of protein. In addition to that, it easy to digest and also adds a natural tangy flavour which tastes delicious. I used homemade buttermilk which was freshly made while making cultured ghee at home. You can check out the recipe here- Homemade Ayurvedic Cultured Ghee. If you can’t find buttermilk, use yogurt or homemade curd.

Recipe: makes 12 pancakes

Ingredients

  1. Barnyard Millet flour: 1 cup
  2. Flattened Rice/ Poha: 1/2 cup
  3. Foxnuts/Makhana: 3/4th cup
  4. Buttermilk: 2 cups
  5. Water: 1/2 cup or as required 
  6. Ginger: 1” long
  7. Green Chilli: 1
  8. Salt to taste
  9. Baking soda: 1/2 tsp
  10. Chopped Vegetables- Onion, Capsicum, Tomato: 2 cups
  11. Chat masala: a pinch (optional)
  12. Curry Leaves: Handful
  13. Oil/Ghee for cooking

Instructions 

  • In a large bowl, add foxnuts, barnyard millet flour and poha. Now add buttermilk and mix well. 
  • Cover and let it rest for 20 minutes. The foxnuts and poha will soften and absorb the buttermilk. At this point it will have a thick consistency. 
  • Now add everything to the blender. Add salt, ginger and green chilli. Then add water and blend to a smooth consistency batter. Add more water if required but add little at a time. Do not make a runny thin batter.
  • Empty the batter in a bowl and add baking soda. Mix gently.
  • Add chopped vegetables and curry leaves in about bowl. Sprinkle some salt and chat masala if you like and mix well. Keep aside.
  • Heat a non-stick pan or cast iron pan. Bring it to medium heat. Spread one ladle full of pancake batter on the pan. Add oil/ghee around the edges.
  • Now add some vegetables on top and press the vegetables gently. Cook on medium flame for 3 minutes or till the edges brown. Carefully flip and cook the other side for another 2-3 minutes or till it becomes nice and golden brown.
  • Cook the remaining pancakes in the similar way. Serve hot with chutney of your choice.

Notes:

  1. Always remember not to add Eno as a leavening agent. It’s an antacid and it’s bad for health. Baking soda will do the similar job and is not harmful when taken in moderation.
  2. Cook these pancakes on medium heat patiently. Do not increase the flame or the pancakes will not cook evenly and might remain raw from the middle. 
  3. You can store the remaining batter in the refrigerator and consume within 2 days.
  4. You can use vegetables of your choice like grated carrots, baby spinach, beetroot etc.

Healthy Wholewheat Carrot Chia Seed Pancakes- Vegetarian High Protein Recipe

These fluffy Carrot Pancakes are high protein vegetarian pancakes and are a brilliant way of incorporating vegetable or fruit in your or your child’s diet. These pancakes remind me of carrot cake, without the frosting of course. They are packed with all the healthy ingredients with inclusion of yogurt to give it more nutrition and a fluffy texture. 

They are so easy to whip up with wholesome, easy to find ingredients and you are just going to love the flavor and texture! Carrots are a great addition to pancakes because of their subtle flavor. Ingredients you will need

  • Wholewheat flour: Wholewheat flour gives a nice nutty flavor to these pancakes. However if you want to make these pancakes gluten free, you can use buckwheat flour. It is a little more nutrient-dense, though the two work similarly. For more gluten free pancake recipes check out my Healthy Protein Packed Pancake recipe.
  • Jaggery Powder: Jaggery adds some natural caramel like sweetness. You can also try these pancakes with applesauce.
  • Plain yogurt: This adds moisture and protein. You can also use milk instead. If you want to make it vegan, you can add Almond Milk or Coconut Milk or any other nut milk. Check out the recipe of Homemade Almond Milk here
  • Coconut Oil: I used coconut oil that’s melted in the pancakes to add some moisture and richness. You can choose to add Olive Oil or Unsalted Butter too.
  • Pure Vanilla Extract: This adds lovely flavor to the pancakes batter.
  • Baking powder and Baking Soda: They are essential to give the pancakes rise, make it fluffy and light in texture
  • Cinnamon and Nutmeg: I love to add these flavors in carrot pancakes or cake. They add a nice warmth and cozy feeling to the pancakes.
  • Chia Seeds: Chia seeds will add more nutrition and protein to the pancakes since we are not using eggs here. Also, it will add more moisture. 2 tbsps of Chia Seeds contain 5 grams of protein.

Recipe: makes 7 pancakes

Ingredients 

  • 1.5 cups of Wholewheat flour
  • 1/2 tsp Baking Soda
  • 1/4th tsp Baking Powder
  • 1/2 tsp Cinnamon Powder
  • 1/4th tsp Salt
  • 1/4th tsp Nutmeg Powder
  • 4 tbsps Jaggery Powder
  • 1 cup Grated Carrot
  • 1.5 cups Yogurt
  • 2 tbsps Chia seeds soaked in 1/4th cup water for 10 minutes 
  • 2 tbsps Oil (Olive/Coconut) or Melted Unsalted Butter
  • 1/2 cup Dark Chocolate Chunks (70%)

Instructions

  • Stir together jaggery, yogurt or milk or almond milk, butter or oil and vanilla in a medium bowl.
  • Add in the flour, baking powder & soda, cinnamon, nutmeg, salt, and stir gently to combine.
  • Now add grated carrots and mix gently. Top it with chocolate chunks if using.
  • Heat a nonstick or cast iron pan or griddle over medium-heat, coat it with some butter. Add a ladle full of batter and spread it thinly. 
  • Cook per side for 2-3 minutes or till the top sets and bubbles start bursting. Flip and cook the other side.
