Authentic Grilled Bombay Sandwich Recipe

This Bombay sandwich is a sweet, salty, spicy and savory recipe filled with a flavor that will leave you wanting for more and more. The best part is that this veggies – loaded sandwich can be given in kids lunch boxes or taken to your office too. Just use the below given ingredients and make the easy tasty sandwich for you and your family.

Ingredients:

  • Bread slices
  • Boiled potatoes, sliced
  • Cucumber, thinly sliced
  • Capsicum, thinly sliced
  • Onion, thinly sliced
  • Chat masala
  • Salt, to taste
  • Green coriander chutney
  • Butter
  • Tomato slices (optional)
  • Besan bhujiya

Method:

Begin by spreading a thin layer of butter on one side of each bread slice. On the unbuttered side of one bread slice, spread a generous layer of green coriander chutney. Adjust the amount based on your taste preference. Place the sliced boiled potatoes evenly on top of the chutney.

Layer cucumber, capsicum, onion, and tomato (if using) slices on top of the potatoes. Sprinkle a pinch of chat masala and a bit of salt over the vegetables for added flavor. If desired, you can spread a bit more green chutney on the unbuttered side of another bread slice before placing it on top of the assembled vegetables.

Heat a tawa and Spread a small amount of butter on tawa. Carefully place the assembled sandwich on the tawa. Allow it to cook for a few minutes on one side until it turns golden brown and crispy. Cook the other side until it becomes crispy and golden brown as well. Once both sides are nicely grilled remove the sandwich from the tawa.

Place the sandwich on a cutting board and cut it into halves or quarters as desired. Spread a final layer of green coriander chutney on top of the grilled sandwich. Sprinkle a generous amount of besan bhujiya over the chutney layer. This adds a delightful crunch and flavor to the sandwich.

Mushroom Cheese Sandwich Recipe

Dive into layers of savory goodness as we combine earthy mushrooms, gooey cheese, and toasted bread for the ultimate comfort food experience.

Ingredients:

1 cup Mushroom, sliced
1 small Onion, finely chopped
1/2 teaspoon Garam Masala powder
Cheese slices (as needed)
1/2 teaspoon Chilli flakes (adjust to taste)
Burger mayonnaise (as needed)
Butter (for grilling)
Salt, to taste
Bread slices

Instructions:

Heat a pan over medium heat and add a small amount of butter. Once the butter melts, add the finely chopped onion and sauté until they turn golden brown.

Add the sliced mushrooms to the pan and continue sautéing. Let them cook for a few minutes until they start to release their moisture.

Sprinkle garam masala powder and chilli flakes over the mushrooms. Stir well to combine and continue cooking for another 5-6 minutes, allowing the mushrooms to become tender and flavorful. Add a pinch of salt to taste.

Once the mushrooms are cooked and have absorbed the spices, turn off the heat and allow the mixture to cool slightly.

Take a bread slice and spread a layer of burger mayonnaise on one side. You can use as much or as little as you prefer, depending on your taste.

Place a generous amount of the sautéed mushroom mixture on top of the mayonnaise-spread bread slice.

Lay a cheese slice over the mushroom mixture, ensuring it covers the entire surface.

Take another bread slice and spread some mayonnaise on one side. Place this slice, mayo-side down, over the cheese layer, creating a sandwich.

Heat a pan or sandwich maker over medium heat. Spread a small amount of butter on the surface where you’ll place the sandwich.

Carefully place the prepared sandwich onto the pan or sandwich maker. Grill the sandwich for a few minutes on each side until the bread turns golden brown and crispy, and the cheese melts to oozy perfection.

Once both sides are grilled to your liking, remove the sandwich from the pan or sandwich maker and place it on a cutting board and slice it diagonally

Healthy Hung Curd Spinach Cheese Sandwich- Easy Vegetarian Protein Recipe

I normally avoid having commercial bread loaves on a regular basis. But once in every few days, we all crave for sandwiches. They are so versatile that everyone loves them. So, when that craving strikes, I try my best to add as much nutrition as I can.

I still remember when my child was 5 years old, he asked me before bedtime, if he can have cheese sandwich with 5 leaves of spinach for breakfast. 😄 The request was made so sweetly, I had to oblige. This was the time he tasted his first hung curd sandwich. He is 10 now and these are still his all time favourite.

This can be your easy peasy laid back weekend breakfast. Hung curd sandwiches are so easy to whip up. If you are looking for a veg sandwich recipe with high protein without mayonnaise, try these – a healthier take with the same creaminess level. These yogurt sandwiches are packed with probiotics from the curd & essential fiber, vitamins and minerals from spinach & herbs.

This recipe is very basic & is vegetarian but you can easily transform it to egg or chicken yogurt sandwich for more protein. 

Greek yogurt also known as Hung curd is nothing but strained yogurt. It is simply homemade yogurt that has been strained off the whey to get a thick and creamy product.

Hung curd can be a great healthy, low calorie substitute for mayonnaise, cream cheese or sour cream. 

I have made it using just spinach. You can use other finely chopped fresh vegetables like carrots, cabbage, onions, capsicum. Use herbs of your choice- mint, coriander, parsley, sweet basil. Sky is the limit! Customise this Yogurt Sandwich Recipe the way you want it.

Recipe

Prep time: 10 minutes Cook time: 5 minutes 
Serving: 5

Ingredients

  • 1 cup Hung curd
  • 1 cup tightly packed Spinach
  • 10 slices Bread (I used wholewheat bread)
  • 1 tbsp Butter 
  • 1 tsp Olive oil
  • Salt and pepper to taste
  • 5 cloves, chopped of garlic
  • 1/4th tsp Oregano 
  • Red Chilli flakes to taste
  • 3/4th cup Mozzarella cheese (optional)

Instructions

  • In a pan, heat butter & olive oil.  Add chopped garlic. Sauté till rawness goes. Now add roughly chopped spinach leaves. Sprinkle a pinch of salt and cook till spinach shrinks and water evaporates. 
  • Allow it to cool a little. Add spinach in hung curd and mix well. Add black pepper, oregano, salt & chilli flakes. Give a good mix. 
  • Take 2 bread slices. Spread hung curd mix generously on one slice. Add some mozzarella cheese on it and top it with another slice. 
  • You can either grill it in a griller or cook it in a pan using a little butter. If cooking in a pan/griddle, cook on a low flame so that the cheese melts. 
  • If using an air fryer, place the prepared sandwich in the air fryer basket or rack. Brush it with some butter. Air fry for 2 to 3 mins at 360 F or 180 C.

Notes:

If you do not have Greek Yogurt/ hung curd, add regular curd to a cheese/ muslin cloth and squeeze it gently to remove excess whey. You can do this the previous night and also hang it in the refrigerator.

Tips and Recipes to Help your Child Recover from Diarrhoea

Diarrhoea (loose, watery bowel movements) is a common problem in young children. It rarely means a child has a serious illness. Three most common reason for loose watery stools are: –

  1. viral or bacterial infection
  2. drinking too much fruit juice
  3. starting a new medicine

The biggest risk of diarrhoea is dehydration which means losing body fluids and not having enough electrolytes for their body to function the right way. Your child NEEDS to stay hydrated at all times which means giving extra liquids in smaller amounts at regular intervals. 

I love summer season but with temperatures soaring comes a large variety of infections and stomach bug is one of most common infections in summers. Most of such cases don’t require any medication or medical attention and can be cured at home with few dietary changes. Mild diarrhoea is 2-4 watery bowel movements in a day which usually goes away on its own. 

When do you require medical attention?

  • If your child is below 18 months old, ALWAYS consult your pediatrician.
  • If diarrhoea lasts for more than 2 days

Now let’s come to the biggest question- WHAT TO FEED YOUR LITTLE ONE?

Yes, we all know the usual stuff that we Indians normally eat when we have an upset tummy like khichri (rice and lentil gruel) and curd rice. But we mothers are aware that our child gets extra fussy when sick and will need variety. As a mother of a 10 year old boy I can understand your plight. We are always in a fix when it comes to preparing the next meal for our child when he/she is sick. We want it to be nutritious, mild, wholesome and above everything else your child needs to find it tasty.

So yes! The biggest challenge is what healthy and tasty stuff can you give? So here I am to your rescue. I will share with you few tips and simple, healthy yet delicious tried and tested recipes which will help you sail through the infection.

Pro Tips

Diet rule for Diarrhoea is B.R.A.T.Y diet, i.e.: Banana, Rice, Applesauce, Toast and Yogurt

  • Include more of yogurt in your child’s diet. The probiotics in yogurt will soothe his/her digestive system.
  • Switch to fruits like apple and banana which helps in binding the stool and avoid all fruits starting with letter ‘P’ like peaches, plums, papaya, pear. Also avoid apricots and strawberries.
  • Give your child more food containing starch. Starchy foods like rice, pasta, potato, white bread (refined flour bread) are easily digested during diarrhea.
  • Avoid all green leafy vegetables like spinach, Broccoli 
  • Include more carrots in diet. Pectin in carrots soothes digestive tract and helps add bulk to the stool.
  • And most importantly, keep your child well hydrated at all times. Strictly avoid all kinds of juices, fresh or concentrated.

Now keeping the B.R.A.T.Y diet in mind, here are some simple and healthy recipes to feed your child

  • Banana Smoothie: Consuming bananas with a little curd/yogurt is a traditional combination which works wonders. Eating banana and yogurt can provide your child with potassium, electrolytes, probiotics and prebiotics which deplete during diarrhoea. Here’s how you can make it. 
  • Carrot Apple and Ginger Smoothie: Carrot are a must when a child is suffering from diarrhoea. Carrot contains pectin. When pectin enters the body, the intestine begins to swell and form a sticky gel, thereby reducing diarrhea. But remember to lightly cook carrots.
  • Potato Poha (Flattened Rice) Patties: Potatoes without the skin are easy on the stomach and contain potassium, an electrolyte lost through diarrhoea. Boiled potatoes are easy to digest and can provide a starchy source of energy when your child is feeling weak due to stomach issues. Poha is light, easily digestible and good source of carbohydrates. It’s also a great source of iron. The husk of rice from which poha is made helps to bind loose stools. Here’s how you can easily make these patties for your child. Remember to keep it low on spices. 
  • Aglio Olio Spaghetti: Pasta is every child’s favourite. This was my life saviour during these troublesome times. They are good sources of carbohydrates, which your child needs for energy, whether he/she is pooping prolifically or not. It can help to bind stools. Also, since pasta has less fibre than whole grains, it is easier on the gut. Check out the recipe
  • Herb Rice with Spring Onions: White rice is a great choice during episodes of upset tummy. It will help to add bulk to the stool and will also provide your child with energy. Since plain bland white rice is boring and children refuses it at times, I tried to spice it a little with black pepper, rosemary, garlic and star anise. All these spices and herbs aid digestion and are actually good for the gut. You can tweak the recipe as per your liking. This is just to give you an idea. 
  • Hung Curd Sandwich: Another great source of carbohydrates, protein and probiotics. Your child will love these sandwiches and will eat them without any fuss. I have also added boiled egg yolk in the hung curd spread. Eggs help slow down bowel movements and help the child recover faster from diarrhoea. You can of course add or remove the ingredients as per your liking. 
  • Chocolate Banana Pancakes: No child says no to pancakes. Ever! Atleast I haven’t seen any. I have added cacao powder instead of cocoa powder. Cocoa powder is more processed than cacao powder, hence cacao powder is a healthier choice. Keeping in mind the BRATY diet, I have added Maida (All Purpose Flour) and oats flour to this recipe with no leavening agents. Check out the recipe here.

Please note, that BRATY Diet and refined flour is recommended by pediatricians for only a short period of time. It helps to neutralise stomach acid and stop diarrhoea. It is to be followed only till diarrhoea is under control. Once the child recovers, please follow the usual diet with whole grains and all kinds of vegetables and fruits.

I hope these recipes help you. Please remember, not to force feed your child especially when the child is sick. Your child will let you know when he or she is ready for food. The most important thing is that your child should remain hydrated at all times. And in all this chaos remember to take a breather. Keep your sanity intact which is another most important thing.
