Chicken Pickle – 100% Himalayan

Chicken Pickle

At Masala Monk, we are always on the search for the unknown. We love to evolve. After the immense love we received on our vegetarian pickles, we were on the lookout to create something interesting for non-vegetarian lovers as well!

Chicken. A word that raises the taste buds of all nonvegetarians.

This pickle is made by “Thakur and Verma Foods” – a collaboration by Pratyush Thakur and Abhinav Verma. After working as engineers in multiple metros for few years, both of us were pulled to Himachal Pradesh due to our love for Himalayas (which is where our ancestral roots lie as well!). We are based out of Kangra Valley and we make our creations in our homes here. We wanted to bring out the best flavors of Himachal Pradesh and what better way to start out with our first product as “Chicken Pickle“.

Chicken Pickle
Isn’t it tempting?
Made with locally sourced organic herbs and spices

As hard-core food lovers from our hearts, having eaten in over 25+ Indian states, we wanted to create something that caters to the diversity of India. After various recipe iterations, we proudly locked down our recipe from the foothills of Dhauladhar Ranges in Kangra Valley.

This particular variant is a “100% low fat chicken breast boneless” version. We have only one source of chicken and we personally source the chicken breast directly from a local free range farm house in Kangra Valley, Himachal Pradesh. All the herbs and spices(15+) are sourced from local manufacturers. It is cooked in 100% premium grade “Kachhi Ghani” mustard oil for 3+ hours over slow flame. Throughout the cooking process, we make sure all WHO guidelines are followed to remove any possible contaminants. We also monitor the cooking temperature carefully (>90 F is maintained for an hour at least).

Nani Maa’s Rajasthani Lahsun Chutney

Nani Maa’s Rajasthani Lahsun Chutney Masala Monk

Being from Delhi, my family relishes spicy food and had been holding the authentic flavour of several Indian dishes. The chutneys we make are my Nani Maa’s blessing in the form of traditional recipes that had been passed on to us.

And it is my responsibility to share the happiness with you, thus I present before you one of spiciest Indian chutneys from the ‘Land of Kings’. Rajasthani garlic chutney, highly spiced and super garlicky and thus has the potential to turn any simple meal interesting.

I could combine Nani Maa’s Rajasthani Lahsun Chutney with anything, be it simple daal chawal, parathas or pulav, dosa, idli or chillas, rolls, tikkis or pakodas, dhoklas, momos or pav bhaji or Punjabi curries. I didn’t end my Rajasthani Lahsun Chutney experiment with just Indian food. I had the confidence of combining it with sandwiches, using it as a spread for tacos, pitta pockets, enchiladas, and even used this spicy garlic chutney as a dip for bread, crackers, and nachos.

Rajasthanis can’t imagine a meal without a good portion of this gourmet chutney next to their plate. Dal Bati Churma, Dal Muthia, Bajre Ki Roti, Gatte Ki Subji, Papad Ki Subji, and Aloo Pyaz Ki Subzi can never be complete without this tangy but spicy chutney.

Made with just seven ingredients – garlic, red chilli, salt, lime juice, refined oil, mustard, and asafetida, this multipurpose condiment has a long shelf life and has health benefits too.

Nani Maa’s Rajasthani Lahsun Chutney aids in digestion and helps build body immunity.

Fig Marmalade

Fig Marmalade by Masala Monk

Did you know – the amount of calcium in one cup of milk and in one cup of fig is equal?. Figs are also a good source of iron, magnesium, potassium, B vitamins, as well as vitamin K.

Fire up your cheese boards with warm crostinis, ladened with this scrumptious Fig Marmalade, a side of Brie and a glass of Fabulous Red Wine to cozy up those cold winter nights.

Homemade Fig Marmalade
A multi-purpose spread for unique party recipes

There are so many delicious ways to use this Marmalade :

  • Use it as a topping for baked brie
  • Layer this marmalade with cheese in a grilled sandwich with turkey, ham, or smoked chicken.
  • Mix it in yogurt. Add sliced bananas and some toasted walnuts for a healthy mid day warm up snack
  • Heat it up and drizzle it over ice cream
  • Serve it with yogurt instead of honey or jam
  • Use it as a base for pizza or flatbread
  • Use it as a delicious glaze for chicken
  • Roast some veggies with olive oil and a spoonful of this fig marmalade… so good!
  • Use it as filling between cake layers
  • Make a simple appetizer by spreading goat cheese on little bread toasts and topping each with a dollop of this Fig Marmalade

My favorite way to enjoy it is on top of toast or a cracker that has been spread with a thin layer of fresh and high-quality goat cheese. Fig, honey and goat cheese might just be one of the most heavenly flavor combos in the entire world. Try it and you won’t be disappointed 😉
