Salted Caramel: Bitter-Sweet Indulgence

A classic recipe from one of my early days when I started cooking, was to perfect a caramel. Sugar is so so difficult to play with, you take your eyes off the bubbling sugar for one second, it’s burnt the very next second. One needs to constantly watch from start to finish, only then a perfectly balanced caramel is yielded. That is exactly which is being done when I am preparing this caramel. No help involved, I do this start to finish, all on my own and love every bit of it.

This caramel is dressed with himalayan pink salt to balance out the sweetness. One can drizzle this caramel on a scoop of good vanilla ice cream (classic never gets old). I absolutely love drizzling caramel on my pancakes and bacon. Drizzle this sauce on your tea cakes and have with coffee/tea. Use it in shakes, coffee, tea and go crazy because it is that addictive. I personally love it just licking it off the spoon 😛

Pro tip: Take the caramel out of the refrigerator 20-30 minutes before consuming. Alternatively, put the jar in a bowl of warm water half way (do not immerse the jar) for about 5-10 minutes. This brings the caramel to its desired drizzle-able consistency.

Shahtoot Chutney / Mulberry Fruit Relish or Jam

Remember those childhood days when your summer dreams were made of delicious wild fruits and expeditions to find as many of them as possible. Climbing up those trees, shaking them to collect loads of fruits, not caring about falling from the tree, and sometimes not even caring about getting caught while stealing them from your neighbours… Ah…good old days!

It brought back fond childhood memories of a simpler time of climbing trees and eating berries.

 

Well, adulating and modernization took it all away from us. But I could never let go of my love for mulberries, mostly because of its balanced flavours of sweet and tangy, with a hint of woody cedar. But unfortunately, I don’t even get to see so many mulberry trees these days and it breaks my heart a little. And for all those mulberry lovers like me, here is some good news. It’s time to bring back your childhood nostalgia this summer as I have found some luscious mulberries and whipped up a delightful recipe – Mulberry Relish, better known as Shattoot ki Chutney in India.

Mulberries grow only for a few weeks before the peak summer, but my craving for this fruit is never-ending. Thus, I resorted to turning these rich and luscious violet berries into a spread that I can hold on to for a few months post-summer.

Made of mulberries, birds eye chilli, salt, sugar, seasoning spices, and vinegar, this chutney is slightly sweet and a little spicy, with a perfect touch of tanginess. You can pair this Mulberry Relish with paranthas, dosas, meats, toasts, pancakes, waffles, cooked whole grain, cheese, or whatever you want to.
