Raita Masala:
RAITA, a yogurt (curd) based condiment made with either raw or cooked vegetables or even boondi (made with fried droplets of chickpea flour or besan), seasonal fruits are also popularly used. It is found in almost every household, be it in North India, South India, Eastern India or Western India. In our house hold, it is served every day in lunch and sometimes even dinner, ever since I can remember. I have and still love eating different types of raitas, be it boondi, cucumber, bottle gourd, mix vegetable, pineapple and even plain curd, which is topped with this homemade raita masala. You can also just add it to plain curd or Yoghurt and add a delicious & healthy dip or sauce to be eaten with Chips, Nachos and even Tandoori or Grilled snacks like Chicken Tikka or Seekh Kebab.

Ingredients:
Mint, black salt, black pepper, red chilli powder, fenugreek leaves, curry leaves, cumin and asafoetida.
Instructions:
Sprinkle on your favorite raita or even plain curd according to your taste.

Punjabi Tari Masala
“Tari” is the gravy part of the Indian curries (especially North Indian). With this masala, you don’t need any other spice, not even salt. Just “bhunofy” your ginger-garlic-onions-tomatoes-green chillies with this masala and you have whipped up the most flavourful tari you will ever have. Use it generously (1-2 tbsp) in aalu matar, gatte ki sabzi, ghar wali chicken or mutton curry and even ghia, tori or in any other boring vegetables and turn them into flavour-bombs 😛

Use in any boring vegetables and turn them into flavour-bombs

Note: Salt and red chillies have been kept at a moderate level, add more according to your taste.

Bharwa Masala:
Turn your ‘oh so boring vegetables’ into a surprisingly delicious spread by stuffing this Bharwa Masala before frying. Karele, baingan, bhindi, tori, tinde… these are the vegetables that comes to my mind when I think of bharwa sabzi and most of us I am sure do not like to eat these vegetables otherwise. But when a generous stuffing of bharwa masala is put inside these vegetables and then cooked, these oh so boring vegetables turn out to be surprisingly delicious. Handpicked whole spices which are roasted and ground at home to the perfect consistency (read not completely powdered) to extract the best flavours and textures out of them.
