Sounds very different and interesting right!!! Well this pickle is very close to my heart.
I was born and brought up in Chennai and did my schooling from a Christian school. Most of my friends were and till date are Christians and a few were Anglo-Indian. When I was in 11th standard, we were students of home-science subject. Every Tuesday we would have a practical class and once our teacher had decided on having specialties from various states to be put up in one thali. My Anglo -Indian friend made this Goan Brinjal pickle. We all were very surprised at the name since we had never thought or imagined that any such pickle exists.
I remember when she started frying the brinjal, the whole lab was filled with such an aroma, that we all stopped what we were doing and ended at her station. It was mesmerizing to see her use minimal spices unlike our other pickles. The pickle was ready within some time, though when matured for a week or more it gives the best flavour. After the presentation and the marks session none of us could stop ourselves from finishing the whole pickle.
Tasty and full of health benefits, this spicy and tangy pickle is something which no one can refuse. Our pickle is a blend of brinjal, garlic, curry leaves and ginger which will not only sparkle your taste buds, but will also give immense health benefits.
Brinjal known as the king of vegetables, has many health benefits. Botanically, brinjal is a fruit and not a vegetable. It grows just like tomatoes on a vine. This vegetable hosts a lot of health benefits.
Fibre and antioxidants are two of the nutrients that make brinjal a food that can keep cancer at bay Brinjals are great for weight loss as they are low in calories. Being rich in fibre, it promotes the feeling of satiety, which would make one feel full and prevent overeating

So I have been an ardent fan of lot of Masala monk stuff and have tasted most of things they have on offer however the Goan brinjal pickle stands out . It is so flavourful and independent in taste I can have rest of the food only to eat this . Perfect balance of spices and oil . It’s a culinary delight . I have ordered 4-5 more bottles just to gift to friends and family so they can enjoy such amazing stuff . Keep on the good work .

I loved this pickle. And am so glad there is a vegetarian version of the traditional goan pickles which are typically all non-veg. It has just the right amount of spice and oil in it for me so it doesn’t feel overwhelmingly spicy or anything and the sweetness is nicely balanced out. Truly delicious which means the jar may not last very long though! Rajani, the creator, is super with customer service too. The original package got misrouted in the post somehow and was returned to its origin. She was very prompt to send in a replacement package through another courier which reached me super quick. Masala Monk ought to find a way to allow customers to pick and choose items of their liking which will allow them to create a gift box of multiple creators. This one is a winner! Thanks Rajani Jain❤️

Totally loved this, it’s so tasty yet not too spicy. Goes perfectly with rice dishes or with Parantha etc. I could taste Goa in every bite.
