Kadaknath chicken meat is quite a treasure trove of taste and health benefits simultaneously. It is very different from the other indigenous or Desi chicken breeds of India. Originated and raised by tribes of Jhabua and Dhar district of Madhya Pradesh, India, Kadaknath chicken is whole black in color, hence also called Kalimasi. The main characteristics of this chicken breed are the color of meat, skin, and bones, making it quite unique. It is one of the three breeds of Black meat Chicken (BMC)available across the world.

Appreciated for its distinctive taste, texture, and flavor, Kadaknath meat is also highly nutritious and has medicinal values. The meat offers 25% protein, which is much higher than 18-20% found in other chicken breeds across the country.  It contains less than 1% fat which is way lower than 15 to 25% found in any broiler chicken. It is also a good source of vitamin B (B1, B2, B6, B12), vitamin E, Vitamin C, calcium, and 18 amino acids.

We at Masala monk source our meat from the largest Kadaknath farm in the Indian himalayas. It has one of the most stringent and elaborate farming practices around, to boost the production of these rare poultry breeds.

As you may have already noticed, we do not shy away from getting quirky in our kitchens. We love to experiment with exciting produce which our country beautifully offers. Another experiment in the kitchen which yielded into this flavor and exciting pickle. Yes, we made a pickle out of Zucchini 😛

As weird as it may sound, trust us until you taste it. Once matured, zucchini absorbs all the spices and mustard oil beautifully that it tastes so good even with plain rice. Best quality zucchini is handpicked, chopped into small pieces, dried in the sun, and then mixed with all the spices and best quality mustard oil. It is then left to mature for a few days until all the spices and zucchini are married together to yield a wonderful and quirky pickle.

We have only one source of chicken and we personally source the chicken meat directly from a local free-range farmhouse in Kangra Valley, Himachal Pradesh. All the herbs and spices(15+) are sourced from local manufacturers. It is cooked in 100% premium grade “Kachhi Ghani” mustard oil for 3+ hours over slow flame. Throughout the cooking process, we make sure all WHO guidelines are followed to remove any possible contaminants. We also monitor the cooking temperature carefully (>90 F is maintained for an hour at least).

At Masala Monk, we are always on the search for the unknown. We love to evolve. After the immense love we received on our vegetarian pickles, we were on the lookout to create something interesting for non-vegetarian lovers as well!

Chicken. A word that raises the taste buds of all nonvegetarians.

This pickle is made by “Thakur and Verma Foods” – a collaboration by Pratyush Thakur and Abhinav Verma. After working as engineers in multiple metros for few years, both of us were pulled to Himachal Pradesh due to our love for Himalayas (which is where our ancestral roots lie as well!). We are based out of Kangra Valley and we make our creations in our homes here. We wanted to bring out the best flavors of Himachal Pradesh and what better way to start out with our first product as “Chicken Pickle“.

As hard-core food lovers from our hearts, having eaten in over 25+ Indian states, we wanted to create something that caters to the diversity of India. After various recipe iterations, we proudly locked down our recipe from the foothills of Dhauladhar Ranges in Kangra Valley.

This particular variant is a “100% low fat chicken breast boneless” version.
