Description
Sambhar Powder, Sambhar Masala, or Sambhar Podi is a South Indian condiment or spice mix which is added in sambar to give it a delicious flavour.
Just when I thought my mother in law was done with her ‘pitara’ of secrets by sharing her coconut chutney recipe, she generously offered us to smell the freshly made sambhar powder which she had proudly made by sun-drying every individual ingredient and stone grinding them to give you the most authentic sambhar masala unlike what you get commercially produced on large scale plant.
This masala uses the native Gundu chilli from Andhra to give the right spice balanced with all the other ingredients including Tamil poni rice and whole spices from Nilgiris.
Sharing an extended part of my South Indian culinary culture with this powder for you to experience the cuisine at its most authentic self.
