Athana Mirchi is a long green fleshy chilli found only in a specific village of Rajasthan, which is named after these chillies. The pickle prepared from these chillies is made in a traditional homemade Rajasthani style.
These fleshy juicy chillies are stuffed with salt, mustard, fenugreek, dry mango powder, saunf, hing, and other spices to bring out the authentic Marwari flavors. Processed with mustard seeds, mustard oil, salt, lemon juice, and turmeric powder in the age-old process, Athana Mirchi Pickle is colorful, spicy, and mildly tangy to make you drool just by the smell and look of it.

If there is one dish that truly captures the essence of the famous (or infamous, if u may) “Dilli se hoon…”, it has to be our very own Tandoori Chicken, Paneer Tikka, Tandoori Chaap, and even Tandoori Momos. Many of these iconic exports from our kitchens, would not even exist without this humble (oh, who am I kidding; it’s as grand as it gets) spice mix. Bedmi Poori
A very classic and popular breakfast which one would find in the by lanes of old Delhi and Uttar Pradesh, is now even easier to make it at home with the ready to use a mix which you just need to add some lukewarm water and knead it and rest it for 20-30 minutes.

This bhatura mix is made with all-purpose flour which I get ground freshly at our local flour mill. Small amounts of semolina and sugar are added to get that perfect bhatura texture and caramelization while frying. Homemade Missi Roti with authentic taste and texture of Punjabi Dhaba
This particular, ready to knead mix, is prepared by keeping in mind the exact taste of missi roti that is served at the highways of Punjab or in Punjab. All you have to do it, add some chopped onions and green chilies and knead it with lukewarm water and you will have a perfect dhaba style missi roti to enjoy with any curry. I personally like them loaded with ghee or butter and served with plain curd or pickle.
Direction to use:

Sambhar Powder, Sambhar Masala, or Sambhar Podi is a South Indian condiment or spice mix which is added in sambar to give it a delicious flavour.
Just when I thought my mother in law was done with her ‘pitara’ of secrets by sharing her coconut chutney recipe, she generously offered us to smell the freshly made sambhar powder which she had proudly made by sun-drying every individual ingredient and stone grinding them to give you the most authentic sambhar masala unlike what you get commercially produced on large scale plant.
