Singhade ka achar (pickled water chestnuts) is one of those seasonal pickles that very few people make. In fact pickling was mostly associated with aam ka achar, bhari mirch ka achar or nimbu ka achar more and these pickles were a must have in any Indian kitchen (read north Indian kitchen). But few families (read chatori families) kept pickling seasonal vegetables on the sly and serving such seasonal pickles as a fresh condiment to bring variety and taste to the everyday meals.

Singhade ka achar is a fresh pickle that is yummy to eat while it carries a bite to it. Each water chestnut is peeled in a specific way so as to keep the soft parts of the skin on and to remove the hard horns, also to remove the tip from both ends to allow the pickling spices to seep in.

I love making pickles so I often try and make fresh and new variety of pickles. I rarely buy ready-made pickles because of their high salt content. The very mention of achaar triggers a physical response — lips puckering at the recall of brine and teeth teetering on tanginess — but also a plethora of memories: of courtyards filled with a gaggle of women, exchanging gossip and news over heaps of raw mangoes, lemons, pickling vegetables, chillies, of running across the terrace as a child and slyly picking up a pale yellow slice, left out to dry. Pickles can liven up a meal of hot rice, steaming paranthas or just plain bread… And if it is homemade with love without preservatives even better!

Spondias mombin, also known as yellow mombin or hog plum is a species a tree and flowering plant in the family Anacardiaceae. It is native to the tropical Americas, including the West Indies. The tree was introduced by the Portuguese in South Asia in the beginning of the 17th century. It has been naturalized in parts of Africa, India, Bangladesh, Sri Lanka, The Bahamas, Indonesia, and other Caribbean islands. It is rarely cultivated except in parts of the Brazilian Northeast. The mature fruit has a leathery skin and a thin layer of pulp. The seed has an oil content of 31.5%.

In traditional medicine, Spondias mombin has had a variety of uses. The fruit has been used as a diuretic and febrifuge. The bark is astringent and used as an emetic and for diarrhea, dysentery, hemorrhoids, gonorrhoea, and leukorrhea.[3] The flowers and leaves are used to make a tea for stomach ache, biliousness, urethritis, cystitis, and inflammation.
