Achari Paneer Tikka, Achari Chicken Tikka, Achari Soya Chaap, have become a regular in menus in almost all the restaurants lately. As the name suggests, this eclectic spice blend is not only used to make a pickle but can also be used to flavour our regular and sometimes mundane curries and starters with that chatpata achar like flavour.
One can add this spice blend in a curry while making the tadka of ginger garlic onion tomatoes. One can also use this spice blend with hung curd to marinate any protein or vegetables before grilling or barbecue. Either way, the result will be lip-smackingly delicious.

This spice blend took some time to develop as it is of utmost importance that the balance of aromatic and earthy spices is just perfect. Whole spices are carefully slow-roasted, ground individually and then mixed to create this flavorful blend.

I was born and brought up in Chennai and did my schooling from a Christian school. Most of my friends were and till date are Christians and a few were Anglo-Indian. When I was in 11th standard, we were students of home-science subject. Every Tuesday we would have a practical class and once our teacher had decided on having specialties from various states to be put up in one thali. My Anglo -Indian friend made this Goan Brinjal pickle. We all were very surprised at the name since we had never thought or imagined that any such pickle exists.

I remember when she started frying the brinjal, the whole lab was filled with such an aroma, that we all stopped what we were doing and ended at her station. It was mesmerizing to see her use minimal spices unlike our other pickles. The pickle was ready within some time, though when matured for a week or more it gives the best flavour. After the presentation and the marks session none of us could stop ourselves from finishing the whole pickle.
