This Sweet Lemon Pickle is my mother’s treasured recipe from Rajasthan, made in small batches with no preservatives just salt and sunlight, the way it’s been done for generations.
Fresh lemons are thoroughly washed, sliced, and then gently mixed with rock salt, roasted cumin, roasted black pepper, and desi khand as a natural sweetener. The mixture is then sun-cured for nearly two months, allowing the lemons to soften and the flavors to mature beautifully.
A true no-oil pickle, it’s light, tangy-sweet, and packed with comforting nostalgia. Best enjoyed with poories, parathas, or mathris, it brings a burst of warmth and tradition to every bite.

Storage:
Once opened, store in a cool & dry place. Always use a clean and dry spoon to scoop the pickle out. If the pickle is not matured to your liking, please keep the jar in direct sunlight for a couple of days.
