Gandrayani, also known as Gandryani, is a traditional aromatic root native to the Himalayan region, especially revered in the kitchens of Uttarakhand. Much like asafoetida (hing), it is used as a tempering agent to flavour dals, vegetables, and local mountain dishes with its bold, earthy aroma and distinct taste.
Apart from its culinary use, Gandrayani has been valued for centuries in local folk medicine. It is known to aid digestion, stimulate appetite, and help relieve stomach ailments such as gas, bloating, and indigestion.
