Description
Rooted in the culinary traditions of Uttarakhand, Moong Mangori, also known as Badi or Vadi, is a unique and nutritious preparation made by soaking, grinding, and sun-drying a spiced batter of moong dal (split green gram). The result is tiny lentil nuggets packed with protein, taste, and tradition.
In the hills, Badi-making is an age-old household practice, passed down through generations. Women from local villages carefully prepare these nuggets during sunny months, storing them for year-round use. Apart from moong dal, other lentils like urad, masoor, chana, or even gahat (horse gram) are also used, often blended with vegetables like petha (ash gourd), kakri (cucumber), mooli (radish), or gaderi (yam) making each variety special and rooted in local flavors.
How to Use:
Moong Mangori can be roasted or fried and added to sabzis, curries, pulao, or even relished as a crispy snack. They bring a delightful texture and depth to any dish.
