This Matki Mango Pickle is a treasured recipe from my friend’s Dadi in Bihar, lovingly preserved and passed down through generations. The process begins with fresh mangoes, carefully cleaned, cut, and then sun-dried for two days. Once partially dried, salt and turmeric are added, and the mangoes are again kept under the sun to cure. A few days later, a blend of roasted spices and wood-pressed mustard oil is added, after which the pickle is transferred to traditional earthen pots (matkis).
These matkis are sun-aged for nearly a month, allowing the flavors to deepen naturally. The use of earthenware gives this pickle a distinct rustic flavor that can’t be replicated in modern methods. Made in small batches, sun dried, and free from preservatives, this pickle is a celebration of slow food and heartfelt tradition.
This is not just a pickle it’s a memory in a jar. Pairs perfectly with puris, parathas, mathri, or anything that reminds you of home.

Fresh mangoes , red chillies , mustard seeds, fennel seeds, fenugreek seeds, salt, turmeric, Clove, carom seeds wooden pressed mustard oil.

Once opened, store in a cool & dry place. Always use a clean and dry spoon to scoop the pickle out. If the pickle is not matured to your liking, please keep the jar in direct sunlight for a couple of days.
