This Mango Hing Pickle is my mother’s treasured recipe from Rajasthan, prepared with love and care, just like it was in our childhood home. Fresh mangoes are washed, cut into small pieces, and then sun-dried for a day to enhance their texture and flavor. The next day, salt, asafoetida (hing), and red chilli powder are added, creating a bold and aromatic spice blend.
Once the ingredients begin to infuse and release their natural flavor, the mixture is transferred into glass jars and left to mature under the sun for at least two weeks. This slow sun curing process allows the flavors to develop fully, resulting in a spicy, tangy, and deeply fragrant pickle that’s a staple in Rajasthani households.

Storage:
Once opened, store in a cool & dry place. Always use a clean and dry spoon to scoop the pickle out. If the pickle is not matured to your liking, please keep the jar in direct sunlight for a couple of days.
