Description
Tangy, garlicky, a little sweet and hot, is exactly how I would describe sriracha. I have developed my homemade version which is made of fresh red chillies, garlic, brown sugar, salt and vinegar. It’s a long process to get the balance of flavours right. Best quality fresh red chillies are picked, the crown is taken off, chopped into small pieces. The chillies, garlic, brown sugar and salt are first ground into a coarse paste. This mix is then put into glass containers to ferment. The cold fermentation process takes about 7-12 days depending on the ambient temperature. This mix is then finely ground and passed through a sieve, vinegar is added and the sauce is simmered on low to get the right consistency and body. There are no thickeners used in this sauce, so all you will get is a homemade real good sauce, made with a lot of care and love.
I am so fond of Sriracha, I put it on almost everything. If there is a sriracha ice cream available, I would definitely try it :P. I put it on breakfast eggs, be it an omelette, fried eggs, poached or boiled eggs. I put it in mayonnaise to make sriracha mayo, which tastes super delicious. I use it while cooking my stir fry vegetables, use it in noodle soups, and even Maggi. Sriracha goes really well in sandwiches, burgers, momos and even bread pakoras :D. Trust me, this sauce should be made mandatory in your pantry.

This has become my favourite sauce! I’ve added this to noodles, stir fry and had with sandwiches. The taste is unlike any chilli sauce I’ve had in the past. It’s become a favourite of everyone in the family. Worth the high price!
