Loved by all, aam papad is known by different names in different parts of India. Commonly known as aam papad or ‘amawat’ all over the country, it is also called ‘amsatto’ in West Bengal, ‘aamba sadhaa’ in Orissa, ‘aamta’ in Assam, ‘maanga thera’ in Kerala, ‘mamidi tandra’ in Andhra Pradesh, and ‘amba vadi’ in Maharastra.
Irrespective of the name, this is a common delight and almost all of us can relate our childhood summers to this gooey fruit leather made of fresh ripe mango pulp. My grandmother used to make aam papad during summers from fresh ripe mango pulp and jaggery and sugar, would let it dry under the scorching summer sun either on the terrace or in the courtyard. But the best part, she would very well know that almost half of it would disappear even before the aam papad would dry properly. The final product would be a thick leather made of several layers of the same mixture.
I have such cherished memories of mom separating the layers one by one and distributing it amongst all the cousins who got together during the summer vacations. The sweet or the sour with the masala, everyone had their favorites.
Tried to recreate the same at home with all the khatta mangoes no one wanted to eat.
Summers make me miss those days, but the only thing I can relish now is the taste. It’s difficult to stop with this. The taste fades away too quickly. Maybe because it isn’t extreamly sweet. I liked it a lot, but, will not be ordering much of this especially since mango season is here. Once it’s over, a repeat if this maybe required. A big fan of Mango 🥭
