My mother in law spoils me with some of the best South Indian food and patiently answers all my questions with a smile.
Lately, I have developed a keen interest in exploring the South Indian cuisine as my earlier knowledge was just restricted to idli, Sambhar, dosa etc. which I certainly feel is very unjust to this beautiful part of India.
Whenever I visit my in laws place, I always used to get intrigued with the big pots filled with thin curd and soaked green chillies under the sun and my immediate question was that I want to see the End Result of how this turns out and tastes.
Eventually, I got to taste the chillies which had soaked up the complete curd after 10 days and had dried up nicely to be deep fried and used as a fiery condiment to my simple curd rice, plain dal chawal, Pongal or whenever I want to spice up a bland meal.
After lot of convincing, finally got to understand the hard and tedious process which MIL follows to make these chillies for the year. Every chilli is individually washed, cleaned and sun dried before being added in the thin curd and considering the rainy Bangalore weather, she takes extra care of the timings of putting the copper vessels under the sun and taking them back to avoid spoilage. As per the full process, one Kg of chilli takes her good 10 days to dry and consumable.
Therefore, when I asked her if she would like to share this culinary joy with everyone, I could see a sense of joy in her eyes as she immediately said Yes 🙂
This is one of the most labour intensive product from my MIL’s kitchen and I couldn’t be more proud to share this with everyone.
